Who doesn't want a dish like this at dinner time? Well into summer at home we really enjoy hot preparations like this tomato soup with rice and vegetables. A quick soup to prepare, nutritious and with a lot of flavor.
Those of you who enjoy soups, I am sure you will not hesitate to try it. Just with its color and combination of ingredients you want to try it, but wait until you can also smell it. You don't need to get complicated to have a good dinner. and this recipe is the proof.
Tomato and rice They are its main ingredients, but this soup also has carrots, potatoes and onions. You can also incorporate other vegetables that you have at home such as broccoli or cauliflower to it. The good thing about this type of dish is that it is easy to make it look different every day.
The recipe
- 1 liter of vegetable stock
- 350g. ripe tomato
- 100 g of rice
- 1 cebolla
- Carrots 3
- Small potatoes 2
- 2 tablespoons olive oil
- Sal Island
- Pepper
- We peel and we chop the onion very finite.
- Then we peel and cut the carrot into small cubes and we do the same with the potato.
- Finally, to have all the ingredients ready, Peel and chop the tomatoes also in dice.
- With all the ingredients already prepared, heat the oil in a saucepan and sauté the onion until it changes color.
- Then we add the carrot and potato. and fry for 5 more minutes, stirring frequently.
- Once the vegetables have taken on color we add the tomato, season with salt and pepper and cook for about 10 minutes, stirring frequently so it doesn't stick.
- Once the tomato is cooked we pour the broth and we let the whole thing cook for 10 minutes.
- After time, we rectify the salt point and we add the rice to cook everything for 20 minutes until the rice is done.
- We serve the tomato soup with rice and hot vegetables.
