In winter we crave comforting dishes that warm us up when we get home. and this white bean, tomato and potato soup It couldn't be more comforting; Even the image manages to convey it. Very complete and with a very appealing color, it is a great option in winter.
I love coming home and having a dish like this to turn to in my fridge. This soup is also very easy to prepare; It won't take you more than 30 minutes to do it and the result will be spectacular. A piece of bread and an orange for dessert and you will have the meal ready.
This soup allows for changes; In fact, the smartest thing is to adapt it to each person's pantry by incorporating the vegetables you have available. I have resorted to onion, only pepper, but some pieces of broccoli or cauliflower or some spinach would fit perfectly. Try it!
The recipe
- Olive oil
- 1 cebolla
- 1 green pepper
- 1 garlic clove
- 2 potatoes
- 300g. whole peeled canned tomatoes
- ½ teaspoon of paprika
- Sal Island
- Black pepper
- 400 g. cooked white beans
- A pinch of hot sauce (optional)
- ½ teaspoon dried oregano
- We chop the onion and the pepper. I like the onion to be noticeable so I chop it into thicker pieces than the pepper.
- We put 2 tablespoons of oil in a saucepan and sauté for five minutes.
- Then we add the chopped garlic and fry for 5 more minutes.
- Then Add the peeled and crushed potatoes. into bite-size pieces and mix.
- Then we add the tomatoes chopped whole and part of the juice from the can.
- We add three or four glasses of water and the paprika, season with salt and pepper and cook the mixture for 15 minutes.
- Then we incorporate the beans, the hot sauce and oregano and cook a couple of more minutes so that the potatoes finish cooking and the flavors meld.
- We serve the white bean, tomato and potato soup hot.
