Ingredients
  • Olive oil
  • 1 cebolla
  • 1 green pepper
  • 1 garlic clove
  • 2 potatoes
  • 300g. whole peeled canned tomatoes
  • ½ teaspoon of paprika
  • Sal Island
  • Black pepper
  • 400 g. cooked white beans
  • A pinch of hot sauce (optional)
  • ½ teaspoon dried oregano

  1. We chop the onion and the pepper. I like the onion to be noticeable so I chop it into thicker pieces than the pepper.
  2. We put 2 tablespoons of oil in a saucepan and sauté for five minutes.
  3. Then we add the chopped garlic and fry for 5 more minutes.
  4. Then Add the peeled and crushed potatoes. into bite-size pieces and mix.
  5. Then we add the tomatoes chopped whole and part of the juice from the can.
  6. We add three or four glasses of water and the paprika, season with salt and pepper and cook the mixture for 15 minutes.
  7. Then we incorporate the beans, the hot sauce and oregano and cook a couple of more minutes so that the potatoes finish cooking and the flavors meld.
  8. We serve the white bean, tomato and potato soup hot.
