Crafting
A few hours before the tenderloin is cooked, we put the fillets in milk. In this way the meat will be tenderized and it will be more tender once cooked.
We prepare a oven plate, big enough to fit all the steaks.
We cook the peppers of the piquillo. We do it in a pan with extra virgin olive oil and the same amount of salt and sugar to reduce acidity. A couple of minutes on each side will suffice.
We batter the fillets loin, first passing them through beaten egg and then passing them through flour. Then we fry them in oil over medium heat.
As we make them, we place them on the baking tray. On each of them we will then place a cheese tranchete and a pepper.
We put the tray in the oven and gratin the tenderloin for 5 minutes at maximum temperature.
We serve hot.
