This weekend we have decided to cook ctypical omida from Mexico. Perhaps many and many of you are used to eating the typical "Mexican" fajitas from Oldel Paso, mixed with vegetables and chicken breast. Well I tell you that these burritos have nothing to do with the Oldel Paso preparation, they are delicious and if you like spicy on top I assure you that you will love them. A Mexican friend taught me the recipe and I can tell you that they are to die for. Try them and you will tell me.

Ingredients for 4 people:
- 500 gr of minced pork (if it can be lean on the head, since it is more tender)
- 5 Tomate
- 1 cebolla
- 3 chipotle peppers.
- 1 garlic
Preparation:
First of all, what we will do is place the tomatoes in a pan and the we will roast. Let them cook for 20 minutes.
Below cwe will cut the onion into very thin rings and we will place them in the pan until it begins to brown, this will be the moment of introduce the meat. We will cook it over low heat until the meat has a golden color.(about 25 minutes).
While the meat is cooking, we will peel the roasted tomatoes We will place them in the blender glass, with a garlic and chili peppers and a pinch of salt. We mix it all together and we already have our chipotle chili sauce. Now we add the sauce with the meat and let it cook for 15 minutes.
Now we just have to heat the Mexican pancakes and assemble the burritos.
