Today we prepare a simple and complete stew, ideal for these cold days that we are enjoying in the north. A stewed chicken with zucchini, mushrooms and cashews that should not overwhelm you with its long list of ingredients since preparing it is extremely simple.
Chicken is the main ingredient in this dish, but it is no less the vegetable base is important which includes onion, pepper, zucchini and carrot to which we have not hesitated to also incorporate mushrooms and cashews that you could replace with other mushrooms and nuts respectively.

- 1 chicken, chopped

- Then we return the chicken to the casserole and we add the mushrooms.
- Next, we pour chicken broth until the chicken and vegetables are almost covered and bring to a boil. Once it boils, cover, lower the heat and We cook 20 minutes.
