Today we prepare a very fresh salad, one of those that you want so much at this time of year. A spinach and nectarine salad or brindle, which you can also prepare, of course with a fruit like a peach. It's about using what you have most at hand.
The salad is very easy to prepare and It only takes four ingredients. The spinach and nectarines that give it its name are two of them; dates and cheese which complement the first. In addition, of course, to a vinaigrette that can be simple and traditional or have a touch of honey like ours.
At home the spinach salads I usually serve them with the honey vinaigrette that I propose to you today. I love the slightly sweet touch that the honey brings to these, and the contrast of this sweetness with that of the balsamic vinegar. But if you don't like it or prefer to add another, go ahead! The recipe
- 3 handfuls of fresh spinach
- 1 nectarine or briñon
- Dates
- A few slices of cured cheese
- 3 tablespoons of extra virgin olive oil
- 1 teaspoon of honey
- 1 tablespoon of balsamic vinegar
- A pinch of salt
- We clean the spinach well, We remove them from the tail and place them in a salad bowl, chopped if they are very large.
- Then peel the nectarine and cut it into segments, adding these to the salad.
- We also incorporate the dates laminated and a few slices of cheese.
- In a bowl, beat all the vinaigrette ingredients: oil, honey, vinegar and salt.
- We dress the salad with the honey vinaigrette and mix everything.
- We served the spinach and nectarine salad.
