How good a hot soup feels when you get home! Don't you agree? Is soup with rice noodles, zucchini and prawns is one of my favorites, I haven't found anyone who doesn't like it yet. It also encourages us to play with its ingredients, which allows us to adapt it to our pantry.
This soup is basically a vegetable soup. Onion, zucchini, leek and carrot are its main ingredients along with rice noodles and prawns that are added at the last moment. And it is that the rice fidos just need to be submerged for 4 minutes in hot water to be done.
Don't have zucchini but other vegetables like broccoli, cauliflower or green beans? Try to do it by replacing it with one of them. You can use to make the broth, commercial vegetable broth or if these are very salty, combine them with water as I do. Ready to prepare it?
The recipe
- 1 tablespoon olive oil
- ½ large onion
- 1 Zucchini
- Carrots 2
- 1 leek
- 1 teaspoon double concentrated tomato
- 2 cups of vegetable broth
- 3 cups of water
- 250 g. frozen cooked peeled prawns
- Some rice noodles (amount to taste)
- We chop the onion, the leek and peeled carrot and cut the zucchini into small cubes.
- In a casserole, with a tablespoon of oil, we fry the vegetables for 5 minutes.
- Later, we add the concentrated tomato, the broth and the water and cook for approximately 20 minutes.
- Finally, add the prawns and noodles of rice and cook 2 more minutes.
- We turn off the heat, remove the casserole from it and let the soup with rice noodles rest for a couple of minutes before serving.
