Today I wanted to prepare a typical summer recipe that is made traditionally in the province of Cádiz. It is a recipe that serves as an appetizer or as tapa, so it is very common on Andalusian tapas routes.

This snail recipe is somewhat laborious, since the snails must be washed very well to release the slime, although that is the key, as well as its delicious broth. It's worth doing, I assure you.

Ingredients

  • 2 kilos of snails.
  • 1 whole onion.
  • 1 head of garlic
  • 1 bag of snail spice (black pepper, cumin, cumin, chilli).
  • Salt
  • Water.

To make this snail recipe, first of all we will have to leave the snails fasting for a whole day. This way we make sure that they are purged. The day after taking them, we will have to wash them well. To do this, we will put them in the tap sink and we will pour water along with handfuls of salt and, we will stir so that they release the slime. Next, we are washing and throwing away the water and doing the same process a few times until we see that they no longer release a lot of slime.

Afterwards, we will transfer them to a large pot and cover it with water and put it soft fire so that with the heat of the water they begin to come out of the shell. Once we see that everyone is outside, we put the fire to the maximum, thus getting them to die outside. This process must be done like this, otherwise we run the risk that they all stay inside and we cannot eat them.

When it has boiled a few minutes, we will add a mesh filled with the snail spices. This mesh can be found in any cheap suverir otherwise, you can do it with a piece of gauze or a piece of clean cloth. In addition, we will incorporate the head of garlic and the onion. While boiling, it is normal for them to release more slime so we will remove it with a spoon or slotted spoon.

Finally, we will leave boil about 30 minutes more and these delicious snails in broth will be ready. They will be served in a deep plate as lunch or in a casserole or bowl or coffee glass as a lid. I hope you enjoy it.
