Ingredients
  • 1 glass of quinoa
  • 2 water glasses
  • 1 large potato
  • 1 cebolla
  • 1 red pepper
  • 1 green pepper
  • ½ eggplant
  • ½ zucchini
  • Sal Island
  • Rosemary
  • Olive oil
Preparation
  1. The first step is wash the quinoa 3 or 4 times so that it is not bitter and all the whitish foam that it releases comes out. When we have done this the next step will be to put a glass of quinoa to boil in two glasses of water, 2 tablespoons of salt and a little rosemary (500 ml approx.).
  2. We leave boil over medium heat for 20 minutes approximately. We will stir every little so that the grain is loose and does not stick together.
  3. Meanwhile, in a frying pan and with some olive oil we will go sautéing vegetables and potato. All previously washed, peeled and cut into thin slices. We will put on medium heat and we will sauté until the vegetables are poached and done.
  4. The last step will be serve the quinoa along with the vegetables. And ready to taste!
Notes
We can add a few drops of soy sauce to the quinoa to give it a different flavor.
