Vegetable puree and mixed salad, dinner for two
Today I wanted to share two healthy dishes for a light dinner: a vegetable purée and a mixed salad . It's also a very simple recipe that makes good use of ingredients. Grandma's stew uses vegetables, so today I'm going to show you another way to make a recipe with these vegetables.
With it, we'll make a vegetable purée topped with some diced ham. And to top it all off , we'll make a very easy mixed salad.
Ingredients
- 3 carrots
- 2 potatoes
- 1 leek
- 1 small turnip.
- Some chicken broth.
- York ham.
- Lettuce.
- Grated cheese.
- Tuna.
- Corn.
- Olive oil.
- Salt
- Vinegar.

Since the salad is served cold, we'll prepare it first. To do this, we'll wash the lettuce very well to remove any insects and any traces of what it might have been sprayed with in the fields.
Next, we'll cut it in half and then into a fine julienne . I particularly like this cut, but if you prefer it whole or in larger pieces, you can cut it this way too. We'll put it in a colander to drain well, or you can use a lettuce spinner on the market that will leave it quite dry.
Once the potato is dry (using your preferred method), place it on a plate and add the sliced ham that you prepared for the mashed potato. Add a can of tuna per person, grated cheese, and corn. You can also add hard-boiled egg if you like. Once the mixed salad is complete, dress it with salt, olive oil, and vinegar.

For the purée, we'll take the leftover vegetables from Grandma's stew and put them in a small saucepan with a little of the stew's broth. Once it starts to boil, we'll blend it with an immersion blender. We'll serve it in individual bowls and add diced ham. You can also add some fried bread, Serrano ham, or hard-boiled egg if you like. The accompaniments are up to you.

I hope this recipe for healthy vegetable puree and mixed salad helps you feel satisfied at dinnertime. Remember that for a good diet, it's best to eat light meals for dinner. Enjoy!
