Prawn stuffed eggs with paprika
The stuffed eggs They are a dish always to be taken into account as a starter; simple to make tend to appeal to almost everyone. Tired of always filling them in the same way, I recently tried a new formula with prawns that conquered my family, young and old.
The sautéed prawns with chilli peppers cayenne add a very special touch to a filling that is very soft and tasty at the same time. And as a final touch, sweet or hot paprika? I encourage you to experience both options. One more way to fill the cooked eggs, which you can add to the eggs stuffed with cheese and olives or tuna.
Ingredients
For two people
- 3 eggs
- 130 gr. prawns (I used frozen)
- 2 cayenne chillies
- 4 tablespoons mayonnaise
- 1 mustard stick
- Pepper
- Paprika
- Oil
Crafting
We start by cooking the eggs in a saucepan for about 10 minutes from the first boil. After time, we remove them from the pan and let them cool.
Meanwhile we sauté the prawns in a frying pan with a drizzle of hot oil and the cayenne peppers. Once done, remove the pan from the heat and with a slotted spoon remove the prawns and let them warm.
We peel the eggs and we cut them in half lengthwise. We extract the yolks and put them in a bowl.
We reserve 6 prawns and chop the rest, adding these to the bowl with the yolks and mixing both ingredients.
Then the mustard and mayonnaise little by little until a consistent dough is neither too thick nor too light. Then, we add a pinch of freshly ground black pepper, mix and introduce our mixture in a pastry bag.
We fill the eggs and garnish these with a little paprika, a little freshly ground pepper and a shrimp.

Notes
It is important defrost with time the prawns and pat them dry with absorbent paper before sautéing them in the pan.
I have used a curly mouthpiece to fill the eggs, I think it gives a more fun and elaborate aspect to this dish, but you can use the one you like the most. If you don't have a pastry bag, you can always use a freezer bag and cut one of the ends to give the filling a little shape.
