Ingredients
- 500 gr. raw peeled prawns
- 1 tablespoon of curry
- ½ tablespoon ginger
- 150 ml. coconut milk
- 2 tablespoons of tomato sauce
- ½ onion
- 1 handful of coriander
- 1 lime or lemon
- Olive oil
Preparation
- To prepare the prawn curry, we first clean the prawns, if they are already peeled, we first salt them.
- We put a casserole over medium heat with a jet of oil, sauté the prawns, remove and reserve.
- Peel the onion and cut into very small pieces. We add it to the casserole where we have sautéed the prawns. We poach it until it is transparent.
- Add the fried tomato to the onion, mix well. Add the coconut milk and cook for a few minutes.
- Add the curry, the teaspoon of ginger and a little salt, stir well. We taste the sauce, we can add more of some spice.
- Add a dash of lime or lemon to taste.
- When the sauce is to our liking we will add the prawns to the casserole and mix, let everything cook together for a few minutes.
- Chop the coriander, if you don't like it you can put parsley, we add it to the casserole with the prawns. We turn off and let it rest for a few minutes.
- We serve immediately hot.
- We can accompany this dish with a long rice or cooked basmati rice.
