Ingredients
  • 3-4 peaches, peeled and cut into thin wedges
  • 3 tablespoons of liquid caramel
  • 200 g. of sugar
  • 90 g brown sugar
  • 120 ml. Of olive oil
  • 120g. butter, melted
  • 1 egg L
  • 180 ml. buttermilk (180 ml of milk and a splash of lemon juice)
  • 1 teaspoon vanilla essence
  • 240 g. Of flour
  • 2 teaspoon of salt
  • ½ teaspoon of baking soda
  • ½ teaspoon baking powder
Preparation
  1. Preheat the oven to 180ºC, line the base of a 20 cm mold. with baking paper and grease the walls.
  2. Then we place the peach segments lightly mounted and drawing concentric circles covering the entire base.
  3. Once done, we pour the candy into thread over the peach so that it is well distributed.
  4. Then in a large bowl we mix the sugar, olive oil, butter and eggs.
  5. Then we add the buttermilk (you can prepare it by mixing the milk with the lemon juice and letting it sit for 15 minutes) and the vanilla essence and mix again until combined.
  6. Now we add the flour, the salt, the baking soda and the yeast and mix with enveloping movements until incorporated.
  7. Pour the mixture over the peaches and caramel and we put in the oven for an hour or until the surface is golden brown and a knife inserted into it comes out clean.
  8. Then, we take it out of the oven and We let it cool for 15 minutes. before running a knife along the sides and turning it over on a plate.
  9. Now we just have to wait for it to cool down to enjoy the peach inverted cake.
