Do you like gnocchi? They are easy to prepare and today you can do it by following our step by step. Although it will not be necessary to enjoy these gnocchi with spicy tomato sauce and cheese, since today there are very comfortable commercial alternatives for those days when we are in a hurry.
Gnocchi are very easy to eat, almost any sauce works well with these. And it's not difficult either. make them at home, but it takes time. If you have a quiet morning or afternoon, however, we encourage you to try it at least once. Those of you who are not going to eat can also freeze them to have for a next quick meal.
Much easier than preparing the gnocchi is to make the spicy tomato sauce that we propose and that it brings so much character to the recipe. The level of spiciness will depend on you and not everyone has the same tolerance to it, so feel free to play with the amounts.
The recipe
- 500 g. of medium potatoes
- 120g. strong wheat flour
- 1 egg yolk
- Salt and grated nutmeg to taste
- 2 tablespoons olive oil
- 3 peeled garlic cloves
- 3 cayenne chillies
- 500 ml. canned crushed tomato
- Sal Island
- 3 slices of marinated bacon
- Grated Parmesan cheese
- We cook the potatoes in plenty of boiling water until when pierced with a knife, it goes in and out easily.
- Once cooked, we take them out of the water and let them cool until we can manipulate them to peel them and mash them until you get a puree.
- Then we let the puree cool, without letting it cool completely, and turn out onto a floured countertop. We flour our hands, make a kind of volcano with the puree and pour the salt, nutmeg and beaten yolk into the center of it.
- We mix with our fingers, incorporating the flour in small quantities until you achieve a homogeneous mass that is easy to handle and does not stick to your fingers. You will have to use at least 110 grams of flour and then see if the dough requires more.
- Once we have the dough ready, we will make a ball with it and We will let it rest for 15 minutes.
- We take advantage of that little time to prepare the sauce. To do this, heat the oil in a frying pan and we sauté the garlic cloves, the chopped bacon and the chillies until the former are lightly golden.
- Then, we remove the garlic, chillies and bacon from the pan and we add the tomato. Mix well with the oil and cook over medium heat until the sauce thickens.
- Once thickened, we adjust the salt point and we return the bacon.
- We return to the dough after rest. We take small portions of it and we shape it into a cylinder, rolling them on the floured countertop.
- Once the cylinder is formed, We cut 2 cm portions. long and we shape the gnocchi, marking, if you want, with a fork those characteristic grooves.
