Do you have half a cauliflower at home and don't know what to do with it? Dare to try these mini cauliflower and chorizo pizzas. They are quick and easy to prepare and an original proposal for your dinners in combination with a green salad.
Cauliflower is the main ingredient with which the bases of these pizzas are prepared, which can later be completed with tomato and cheese, like traditional pizzas, as well as other ingredients of your choice. At home we prefer to make them simple to try, but be creative!
A hand blender This is all you need to prepare the base, which I can tell you in advance that after being baked it is not as solid as a traditional one. Therefore, you will not be able to eat it with your hand, you will have to use a fork. So they have the shape of a pizza
The recipe
- 600 g. cauliflower
- 2 eggs
- 200g. chopped emmental cheese
- 12 tablespoons of tomato sauce
- 100g. mozzarella cheese (grated or in pieces)
- Some slices of chorizo
- Sal Island
- Preheat oven to 220ºC.
- We separate the cauliflower into florets and we reserved half a dozen to decorate the pizzas.
- The rest, we grind them in the blender glass with the eggs, salt and Emmental cheese until a grainy mixture is achieved.
- We line the baking tray with greaseproof paper and We place a metal ring on top to fill it with part of the well-pressed dough up to 1 centimeter thick to shape the first mini pizza. Then we remove the ring and continue creating the rest of the bases.
- Once all the bases are made (6-8 depending on size), we put tomato and a little mozzarella.
- Then we top the pizzas with a few slices of chorizo and a sprig of cauliflower.
- We bake mini pizzas cauliflower for 10-12 minutes until the bases are lightly golden.
- Then, we take it out of the oven carefully so that they don't break and we enjoy the mini cauliflower and chorizo pizzas.
