Preparing the meatballs is no mystery, we have already made them on other occasions in the same way, with minced meat, a little bread crumbs soaked in milk, an egg and some seasonings. The key to this recipe is in the sauce. A tomato sauce that the sweet potato provides a sweet touch which I personally loved.
What if also we add some peas to the recipe? They probably won't convince everyone, but they make this recipe a much more complete proposal. With a Simple salad of green leaves and onion and a yogurt or fruit for dessert, you will have a healthy and nutritious meal with little effort. Dare to prepare them!
The recipe
- 500 g. minced meat (mixture of beef and pork)
- ½ chives, chopped
- 1 slice of old town bread
- 60 ml. milk
- 1 egg
- ½ teaspoon freshly ground black pepper
- 1 teaspoon of salt
- A pinch of garlic powder
- Flour (XNUMXg)
- 2 garlic cloves, minced
- 1 chopped onion
- 1 sweet potato, peeled and diced
- 2 teaspoons tomato paste
- 1 glass of crushed tomato
- Vegetables soup
- 1 cup frozen peas
- A handful of almonds
- Olive oil

- We put the milk and the slice of bread in a small bowl so that it soaks.
- Then, in a large tray or bowl we mix the minced meat with the egg, chives, chopped bread, salt, pepper and garlic powder until well integrated.
- Once the dough is made we form the meatballs with our hands and pass them through flour.
- Next, we heat oil in a saucepan and we fry the meatballs in batches until they are golden brown, removing them to a plate as we do them.
- Then We prepare the sauce by sautéing the garlic and onion for 5 minutes in a large frying pan or saucepan with two tablespoons of oil.
- After five minutes, we add the sweet potato and sauté for a couple of minutes.
- Then we add the tomato concentrate and the crushed tomato and cook a couple of more minutes.
- Then we pour a glass of broth of vegetables so that the sweet potato is almost covered and the peas. And we cook until the sweet potato is almost tender.
- Then, we add the chopped almonds and the meatballs and cook for three or four more minutes over medium-low heat.
- All that's left to do is enjoy the meatballs in sauce with sweet potato.
