Ingredients
- 1 kg lean pork (pork tenderloin)
- 1,200 kg of crushed natural tomato
- green peppers
- olive oil

Preparation
- To begin, cover the base of a pot with olive oil, when it is hot add the chopped meat. Brown it over medium heat, we do not want to cook it completely, but to give it color and seal it so that it preserves all its juices.
- When it is ready, add the crushed tomato, season with salt and pepper and a pinch of sugar to correct the acidity of the tomato. Lower the heat so that the tomato does not jump too much. Cover the pot and leave for 30 minutes, stirring from time to time.
- While we prepare the peppers. Wash and dry them, cut lengthwise and fry in a pan with olive oil. Be careful that the oil is not too hot so that the skin of the peppers does not burn. Remove them on a plate with kitchen paper and salt. Add the peppers to the meat pot with tomato and cook for a few minutes.
