Mandarin sorbet with cava
Mandarin sorbet with cava, a rich recipe to accompany meals on special occasions.
This sorbet is ideal to put it in a meal with many dishes just before taking the last dish (meat or fish) although you can also put it as a dessert, if it is chocolate, better. You can take it before a few cheeks in Porto sauce or accompanying a chocolate cake.
Ingredients
- 1 kg. and a half tangerines
- 170 gr. lemons (3 units approx.), peeled without seeds or white skin
- 300 gr. sugar
- 100 gr. of water
- 200 ml. cava
- Madroños, herb or cherries to decorate
Crafting
In advance
We peel the tangerines, divide them into four parts or segment by segment and place them on a tray. We put them in the freezer and when they are hard we put them in plastic bags and keep them frozen until the moment of use.
At the time
Add the peeled lemons, cava, sugar and water to the thermomix glass. We add half of the frozen tangerines and crush 30 seconds on speed 10. Add the rest of the mandarins and crush on speed 10, with the help of the spatula until the tangerine skins are not noticeable.
If you don't have a thermomix you can use a glass blender.
Serve in glasses and garnish with a strawberry tree as in the photo.
