  • 600 grams loin in fillets
  • 1 cebolla
  • 50 grams raw almonds
  • 1 glass of broth
  • 1 glass of cream to cook 200ml.

  1. To prepare the loin with almond sauce, we will start by peeling and cutting the onion into small pieces.
  2. Put a frying pan with a tablespoon of olive oil, add the almonds, let them brown over medium heat so they don't burn. When they are, we take them out, chop them and put them in a robot, we grind them. We can leave them in small pieces or powder.
  3. In the same frying pan we will brown the pieces of peppered loin, take them out and reserve.
  4. Add the chopped onion and let it poach.
  5. Add the broth and cream to cook, let everything cook a little, about 5 minutes over medium heat.
  6. Add the ground almonds to the sauce, let it cook and form the sauce, if it is thick you can add a little broth or water.
  7. If you want the finest sauce, we will grind it.
  8. Once ready, add the pieces of loin, let everything cook together, taste salt and rectify.
