The coffee cake that we are preparing today is sweet and super fluffy. A traditional sponge cake ideal for breakfasts and snacks.

Ingredients
  • 380 g. Of flour
  • 20 g. chemical yeast
  • 5 eggs L
  • 115 g. white sugar
  • 115g. brown sugar (+extra for dusting)
  • 150 g. Of olive oil
  • 80 g. milk
  • 100g. freshly brewed black coffee

  1. We sift the flour and mix it with the yeast in a bowl.
  2. In another bowl, we beat the eggs with both types of sugar at high speed until obtaining a fluffy cream that triples the initial volume.
  3. When that happens, without stopping beating, but at a lower speed, Gradually add the oil.
  4. Then we do the same first with milk and then with coffee.
  5. Finally, we incorporate the flour mixture and yeast little by little and without stopping beating.
  6. Once all the ingredients are integrated, pour the dough into a container 30×22 centimeters or similar lined with baking paper.
  7. Sprinkle a little brown sugar and take to the oven previously preheated to 180ºC.
  8. Bake for 30-35 minutes or until done.
  9. Then, remove the mold from the oven and let it cool down for 10 minutes before turning it out on a wire rack to cool.
  10. We enjoyed the coffee cake with a coffee, a cocoa drink or a scoop of ice cream.
