Homemade quince paste

Making quince paste is easy, although it is still laborious. Quinces must be washed well and peeled; eliminate those pieces that are not healthy if necessary. It is also advisable to leave them marinate with sugar to facilitate cooking. The work that yes, has a great reward. With cheese or simply with bread, it is delicious.
Ingredients
- 1 kg. ripe quinces
- 800 g. of sugar
- The juice of a lemon
- Vanilla
Crafting
We wash under the tap the quinces and peel them. We reserve the peelings.
We cut the quinces into pieces and we are placing them in a bowl with lemon juice. We are stirring them so that they are well impregnated with juice as we incorporate them.
Add the sugar and mix well. We let marinate all night.
The next day, we put the mixture in a large saucepan, add a few drops of vanilla essence, the peelings in a mesh bag and cook for 50-60 minutes. The liquid will thicken and the color will turn from yellow to a reddish hue. It will be ready when taking a tablespoon of the mixture and leaving it in the fridge for a few minutes, it solidifies.
Once ready, we remove the peelings and we crush with the mixer.
We pour the quince into a container and we wait for it to cool completely before putting it in the refrigerator to finish settling.
Once very cold, with the help of a small knife, we can unmold it on a source.
