Homemade lemon jam

Ingredients:
- 1 kilo of lemons
- 1 kilo of sugar
- coarse salt
We start cutting the lemons for himhalf and we remove the annoying nuggets that always end up appearing somewhere.
We let them sit for a while, at least two days in water and a tablespoon of coarse salt, to reduce its acidity level.
Once the days have passed, we peel them and cut the pulp into small squares to prepare the jam.
We add the sugar, maintaining the proportions of one kilo of sugar for one of lemons.
We put it to cook and with a wooden spoon we mix. When it is ready we will notice that if we put it on a plate, it remains smooth, without collapsing.
The best of all, is that we can have jam in the fridge for more than two months, as long as we put it in a glass jar.
