Homemade chicken croquettes

The Croquetas they are something very typical in grandmothers, and with good reason! With them we can take advantage of a multitude of leftovers that we have from other food such as chicken, veal, chickpeas, potatoes, carrots and a long etcetera, that is why they are very good for us especially in these times, because we are not going to throw anything away. In this case, the ones I bring you are chicken and they were rich, rich.

Difficulty level: Easy, but maybe a bit entertaining

Preparation time 30 min. + the time it takes to bread them

Ingredients:

  • 1 chicken breast (in my case roasted)
  • 5 tablespoons of flour
  • Milk
  • Sal Island
  • Pepper
  • Olive oil
  • 2 cloves of garlic
  • Bread crumbs
  • 1 beaten egg
  • Frying oil

Preparation:

In a frying pan we add a little olive oil and the two garlic cloves, crushed and with the skin. Add the chopped chicken as small as possible and cook over high heat. Let's take into account that the chicken is already cooked, the only thing that interests us is that it takes flavor of the garlic. In case you make them with raw chicken instead of leftovers, you would have to cook it.

After a few minutes we remove the garlic, put on medium heat and add the five tablespoons of flour. We stir well and we give it a few turns so that everything is cooked together. We add salt, pepper, mix again and add the milk little by little until the dough is to our liking. In my case I like it to be juicy, you can try it while you cook.

When it is ready, we put the dough on a plate or a platter and let it cool. Once it is cold, we are going to form the croquettes until we finish with all the dough, we will go through the beaten egg and the breadcrumbs. When all are ready we fry them in hot oil and that's it.

When serving:

They can be served with French fries, the preferred form of children, with mashed potatoes or with a salad. I made them in mini size and they would have been very well served with a sauce, for example, tartar sauce (it would be to place them on a plate in a circle and place the sauce in the center).

Recipe suggestions:

  • Instead of chicken, you could have used beef, rabbit or even some fish such as hake.
  • In addition to the meat, we can add cooked carrot or cooked potato.
  • We can also enjoy them without having to wait for something to be done. Cheesy spinach croquettes are very good and sometimes even children will tolerate them.
