Easy rice

Before anything else, let me introduce myself. My name is Irene Arcas , and some of you may know me from the blog Thermorecetas, where I'm the coordinator and editor. Starting today, I'm joining this project to share all those great recipes that aren't Thermomix-made, but are just as delicious and that we've been making forever.

We already have a great recipe for rice with vegetables on this blog , but today I'm sharing a super easy rice dish , one of the first recipes I ever learned to make. This rice will never overcook because we're using Brillante brand rice. It's perfect for those who haven't yet mastered cooking rice to perfection , and we'll be serving it with delicious frozen vegetables and pieces of chicken that will add a great flavor. Shall we get started?

Ingredients (4p)

  • 200 gr shiny rice (the one that does not pass)
  • 6 pieces of chicken or rabbit pieces
  • 200 grams of frozen vegetables (mine had onion, carrot, aubergines, beans, mushrooms, etc.)
  • 1 chicken bouillon cube
  • 20 prawns
  • A few threads of saffron
  • A pinch of yellow food coloring or turmeric.
  • Olive oil
  • Water

Preparation:

In a large, deep pot, add a generous amount of olive oil. When hot, brown the chicken/rabbit, then add the frozen vegetables. Cook over low-medium heat for 5 minutes . Add the coloring.

Add the rice and sauté for 1 minute. Add 2 1/2 parts water. Stir well to prevent sticking, add the crumbled stock cube, and simmer over low-medium heat for 20-25 minutes, partially covered. Five minutes before the end of cooking, add the shrimp and saffron threads. If desired, you can increase the heat to high towards the end to brown the bottom. Once the cooking time is complete, let it rest, covered, for 5 minutes .

You can add a splash of lemon.

Comments: This rice is perfect for preparing well in advance. It's also delicious the next day and reheats perfectly in the microwave without affecting its texture or flavor.
