Ingredients
  • 400-420g. desalted cod (in loins)
  • 1 egg
  • 150 g. rice flour
  • 1½ teaspoons chemical yeast
  • 1 garlic clove
  • Sal Island
  • 40-50ml cold beer
  • Virgin olive oil for frying
Preparation
  1. Cut the cod loins into bite-sized pieces and dry them well with absorbent paper.
  2. Then in a bowl we beat the egg and once done add the rice flour, the yeast, the crushed or grated garlic clove, the salt and 40 ml of cold beer. We beat until we have a homogeneous paste.
  3. Does the batter have the proper consistency? This should resemble a light custard. Add a piece of fish: if the batter covers it well, without leaving gaps, it is suitable for battering. Is it too dense? We added some more beer. Too runny? We add more flour.
  4. Once the batter is done we heat olive oil in a small but deep pan so that it covers the cod pieces.
  5. When the oil is hot, we pass the cod through the batter first and then fry until golden brown.
  6. As we make them, we take them out and we let drain on absorbent paper.
  7. We serve the cod fritters immediately.
