How we liked this one at home chicken and sweet potato puff pastry. We know that it is not a recipe that we will use frequently, but we think it is a great autumn proposal, especially on those occasions when you receive guests at home and do not want to get too complicated.
The chicken and sweet potato filling is tasty enough for this recipe to stay in your memory. But they are not alone in filling; a sautéed leek and carrot gives it flavor and lots of juiciness. Aren't your mouths already watering?
You will be convinced when you know what easy it is to do. And it will only take you half an hour to have all the ingredients prepared. And then you will only have to wait for them to cool to assemble the puff pastry and put it in the oven. You won't be able to wait for it to come out.
The recipe
- 2 small/medium sweet potatoes
- 2 Carrots
- 2 leeks
- 1 chicken breast
- 2 eggs
- 2 sheets of puff pastry
- Sal Island
- Pepper
- Olive oil
- We peel the sweet potato and we cut it into dice to cook them in a pot with plenty of water and salt until they are tender but do not fall apart. Once done, we take them out, drain and reserve.
- Now, peel and chop the carrots and the leeks and sauté them in a frying pan with a little oil until they are tender.
- While we cook the chicken breast, and then crumble the meat.
- Once it is crumbled we add it to the pan with the leek and carrot, season with salt and pepper and let cool.
- Is it cold already? We mix it with the sweet potato and the beaten eggs, reserving a little of the beaten egg to brush the puff pastry later.
- We preheat the oven at 180 ° C.
- Now we spread a sheet of puff pastry on the oven tray, keeping the paper.
- About this we place the filling, leaving a little more than a centimeter on the edges.
- Then we cover with the second sheet of puff pastry and seal the edges well.
- We brush the puff pastry with the remaining egg and put in the oven.
- We cook it for approximately 40 minutes or until golden.
- Then, we carefully remove it from the oven and serve the hot chicken and sweet potato puff pastry.
