Yesterday I proposed an ideal recipe for those informal weekend dinners with family or friends: crispy chicken with kikos. Today, I propose another one that you can also incorporate into the table on such occasions: Cheesy Garlic Bread, a wonderful accompaniment.

Cheesy Garlic Bread
Garlic bread with cheese is a wonderful accompaniment to fish and vegetable soups, but also a great snack dish for informal dinners.

Ingredients
  • 1 head of garlic
  • ½ sweet onion
  • Black pepper
  • Extra Virgin Olive Oil
  • 100g. of butter
  • 1 tablespoon of parsley
  • ½ teaspoon minced cayenne pepper
  • 1 teaspoon of salt
  • 1 loaf of bread
  • 4 slices of havarti
  • 150 g. cured mozzarella
Preparation
  1. We preheat the oven at 180ºC with heat up and down.
  2. We cut the top of garlic head and place it in a casserole suitable for the oven with a lid or on aluminum foil large enough so that you can wrap it completely later. We also add the onion.
  3. Season with salt and pepper, water with a drizzle of olive oil, cover the casserole or close the aluminum foil and we bake for an hour or until garlic is tender and lightly golden.
  4. Then we take it out of the oven and we let them warm before removing the pulp from the garlic.
  5. We raise the oven temperature to 200ºC.
  6. Then mix the garlic pulp and the onion already tempered with the butter, the parsley, the cayenne pepper and the salt in a bowl. The butter should not melt, so the garlic should be warm. The result should be a kind of paste.
  7. Once done, cut the loaf of bread lengthwise and spread each half with the butter.
  8. Then we put two slices of cheese on each of the halves and cover with the chopped or grated mozzarella.
  9. Place the bread on the baking tray and cook for 20 minutes until cheese is melted and golden.
  10. Serve the cheesy garlic bread immediately.
