So I gave with this recipe cheese cake with a touch of manchego, a creamy bite with a lot of personality for all audiences. Ingredients
For the base
  • 60 butter g
  • 70 g almonds
For the cake
  • 4 eggs M
  • 600 g of cream cheese (Philadelphia light)
  • 500 ml of liquid pastry cream
  • 200 g of sugar
  • 1 Oikos Greek yogurt
  • raspberry or strawberry jam for garnish
  • natural strawberries and raspberries to decorate

  1. We crush the cookies with the help of a tourmix until obtaining «cookie powder».
  2. We do the same with the almentras.
  3. We mix both ingredients and pour it on the base of a round mold with measurements between 18 or 20 cm.
  4. Melt the butter and add it to the mold to make a compact dough.
  5. We squeeze with our fingers or with a spoon.
  6. We line the mold on the outside with aluminum foil so that later, when it is placed in the oven in a bain-marie, the water does not leak through the cracks in the mold.
  7. We heat the oven to 180 degrees.
  8. We put the mold in the oven for 10 minutes, so that the base is browned and hardened.
It's time to prepare the cream cheese.
  1. We beat the eggs with the sugar, until they turn white.
  2. We add the cream, the Greek yogurt and the Philadelphia cheese.
  3. We beat with a mixer but not at maximum power, we want to prevent bubbles from forming due to the air entering the handle.
  4. It will be necessary to beat this mixture with the mixer, but do it carefully, making sure that it takes in the least amount of air.
  5. We add two tablespoons of grated Manchego cheese to the mixture and beat a little more.
  6. After 10 minutes, remove the mold from the oven, and lower its temperature to 150 degrees.
  7. We pour the cream cheese on the base of cookies
  8. In a deep baking tray, add 1 finger of water (for the bain-marie) and place our mold with the cheese cake.
  9. We bake at 150 degrees for 1 hour and 45 minutes.
  10. When the cake is cold, decorate with raspberry jam and strawberries.
  11. We chill in a refrigerator for a minimum of 2 hours.
