Beef tongue in sauce
The language is a meat whose consumption varies greatly from one culture to another. As with all the parts included in the term offal, there are those who cook it regularly and those who avoid it. I am among the first; the tongue in sauce It has always been cooked at home and it is a traditional dish that I appreciate very much.
The tongue is a very tender meat and therefore very appropriate for both children and adults; for all those who may have difficulty chewing. With spanish sauce -a fantastic accompaniment to many dishes - it becomes a delicacy suitable for the whole family. It also has another factor in its favor, you can keep it in the fridge and taste it up to two days later without it being hard.
Ingredients
- 1 beef tongue
- 1 Carrot
- 1 cebolla
- 1 leek
- 1 hoja de laurel
- Sal Island
- 1 egg
- Flour to coat
For la salsa:
- 2 onions
- Carrots 2
- 1 green pepper
- 1 ripe tomato
- 1 glass of white wine
- 1 glass of broth to cook the tongue
- 1/2 tablespoon of chorizo pepper meat
- Extra virgin olive oil
- Sal Island
- Pepper
Crafting
We wash the tongue and we put it in a large casserole with the vegetables and a little salt. Cover with water and cook for approximately 2 hours or until tender.
We stick out the tongue and let it temper to remove the skin and cut it into fillets about 2 cm. thick. The broth, we strain it to take advantage of it later.
We prepare the sauce. To do this, the onion, green pepper, red pepper and carrot are chopped and sautéed in a frying pan with a good drizzle of oil until tender. Then the tomato is added, peeled and chopped, and cooked for a few minutes. The white wine is then poured in and the alcohol is allowed to evaporate. Finally, add the broth, salt, pepper and chorizo and cook for a minimum of 15 minutes. Once that time has passed, the salt is crushed and rectified if necessary.
We batter the fillets of tongue passing them by flour and egg and we introduce them in the sauce. We let the flavors integrate and the sauce is finished bind by putting the clay pot on the fire for 15 minutes.
Notes
You can cook the tongue in a pressure cooker, it will save you a lot of time.
