Aubergines stuffed with meat with cheese
The stuffed aubergines is a very versatile dish, since we can fill it with whatever we want, chicken, mushrooms, rice, etc. In addition, it is a very strong dish and, also very healthy, because it has nothing more than minced meat and vegetables.
The Eggplants it is a food low in calories but very rich in benefits. They contain many nutrients that we need to maintain our physical energy, among which is fiber, which is what helps us purify our body.
Ingredients
- 2 aubergines.
- 200 g of minced beef.
- 1/2 large onion.
- 1/2 large green bell pepper.
- 3 small tomatoes.
- Salt
- Olive oil.
Preparation
Firstly, we will prepare the aubergines. To do this, we cut it lengthwise, and we will make incisions lengthwise and crosswise, so that we can then easily remove the meat. We put them on a baking sheet with greaseproof paper, add a little salt and a good drizzle of olive oil, and cook them in the oven for half an hour at 180º C.
While the aubergines are cooking in the oven, we will make the filling. To start, we will chop the onion, the pepper and the tomato in small cubes.
Later, we will put it to poach in a pan over medium heat following this order, onion, pepper and, finally, the tomato. When we see that everything is depleted, we will add the minced meat and stir well.
We will cook until the meat has changed color. By that time, the aubergines will already be cooked, so we will remove the meat and add it to the filling out of the pan.
We will cook a few more minutes until we see that everything is well integrated and we will fill the aubergines. Then, we will put cheese on top, and the Grill for about 5 minutes in the oven at 180º C.
