Ingredients
  • 3 tablespoons olive oil
  • 1 cebolla
  • 1 green pepper
  • ½ red pepper
  • 400 g of squid tips
  • 2 cups of rice
  • 4 cups of fish broth
  • 1 teaspoon tomato paste
  • 275 g. of mussels
  • Salt and pepper
Preparation
  1. We chop the onion and the peppers very fine.
  2. We heat the oil in a large saucepan and we poach the vegetables for 10 minutes over medium heat.
  3. Then We add the squid tips and we fry them until they change color.
  4. Once done, we incorporate the rice to the casserole and stir a few times.
  5. We add the hot broth, the concentrated tomato, season with salt and pepper and cook for 6 minutes with the lid on at high temperature.
  6. Then, we lower the heat and without stopping the boil we cook 10 more minutes rice, adding the mussels well distributed 3 minutes before the end of the time.
  7. When the rice is done, remove from the heat and let it rest for a minute.
  8. We serve the rice with squid tips and mussels hot.
