Ingredients
  • ½ chicken, cut into pieces
  • 1 cebolla
  • 1 green pepper
  • Carrots 2
  • 200 g. mushrooms
  • 1 large potato
  • 1 large sweet potato
  • Sal Island
  • Pepper
  • 1 teaspoon double concentrated tomato
  • A few strands of saffron
  • Chicken soup
Preparation
  1. We chop the onion and the pepper. Peel and cut the carrots into slices and slice the mushrooms.
  2. Now, We season the chicken with salt and pepper and brown it. in a saucepan with a splash of very hot oil.
  3. Once golden, we remove it from the pan and We fry the onion in this, the pepper and carrot for 10-15 minutes, until they take on colour.

  5. Once the vegetables are poached, add the mushrooms and fry for a few more minutes until golden.
  6. Then we incorporate the potatoes, the concentrated tomato, the browned chicken, the saffron, salt and pepper and mix well.
  7. We add chicken broth until almost all the ingredients are covered and bring to a boil. Then continue cooking over medium heat for 10 minutes.
  8. After 10 minutes We add the sweet potato pieces and cook for at least 12 more minutes until they are done.
  9. All we have to do now is let the chicken, sweet potato and mushroom stew rest for 10 minutes before serving it.
