The cod gives a lot of flavor to the salad, to make it in a salad we have to desalt it to remove the salt, we can leave it with a pinch of salt. We can find it already desalted to the point of salt, which is at its point.
A healthy dish since the vegetables are raw, the tomato and onion are very good and the cod is a low-fat, low-calorie white fish. For this dish you can add more ingredients, I accompany it with some olives and a rich vinaigrette.
This type of cod salad in Catalonia is called exqueixada, on Easter dates can not miss. It is a rich and simple salad to prepare, in a short time we have it ready.
- 150 gr. desalted cod
- 3-4 tomatoes
- 1 onion or spring onion
- black olives
- Olive oil
- Sal Island
- Vinegar
- Pepper
- To prepare the cod salad, first wash the tomatoes and cut them into pieces, peel the onion and cut it into thin slices.
- If we buy the salted cod we will soak it for about 48 hours, changing the water every 8 hours. After this time we have it ready to make the salad.
- Next we cut the desalted cod into pieces or strips. Take a plate and put the tomato first, the onion on top and finally the cod in pieces.
- Add a little bit of salt and pepper. We add some olives.
- We prepare a vinaigrette. In a jar or a glass, add olive oil, a splash of vinegar, emulsify the mixture well and add it to the salad.
- And that's it, right away we have a great salad.
